Frittata is similar to an omelette, it is also prepared mainly from eggs. They can be mixed with various vegetables or herbs. It is prepared in a frying pan, but slower than an omelette – if it is fried only from one side, afterwards you should bake it on the grill in the oven for a short time. But it can be also baked in a ceramic baking dish in the oven, I use this method too.
Frittata with Spinach
100 g frozen spinach
4 tablespoons semolina
4-5 tablespoons of hot milk
2 tablespoons melted butter
4 tablespoons of grated cheese
Grease the baking dish. Pour boiling water over the spinach leaves, drain and cut into smaller pieces. Pour the semolina over with hot milk, add butter and yolks and mix well. Season with salt and pepper, add spinach. Whisk the whites from the egg whites and mix gently into the yolk mixture. Finally, add the cheese. Bake in an oven preheated to 170°C for about 25 minutes. Served with yoghurt or radish salad.
